On Friday, I organized a Souper Bowl
Cook-off at my school.
The staff lounge was decked out with
football-themed decorations. Teachers were encouraged to bring a
favorite soup to be sampled and judged by staff.
We had a variety of
soups including taco soup, tortellini, sausage and spinach soup,
white chicken chili, and a potato and bacon soup. Staff sampled each
soup and then chose their favorite by secret ballot. They also
predicted the winner of the Super Bowl for a chance to win a prize.
Low Carb Taco Soup
Jen, a reading interventionist at my
school, made the winning soup for our soup cook-off. Her taco soup
received 10 votes. It made enough to feed a large crowd, but it was
all gone by the end of lunch. Jen’s soup is very thick and creamy
and full of taco flavor.
—4 lbs ground pork
—6 (8 oz) pkgs cream cheese
—6 cans Ro-Tel diced tomatoes and green
chilies, undrained
—6 tablespoons taco seasoning
—2-3 cups chicken broth
Brown the pork and drain off the
grease. Add all ingredients to a crock pot. Cook on high for 2 hours
or on low for 4 hours. Stir to combine ingredients.
Note: Jen makes her own taco seasoning,
but if you don’t, one taco seasoning packet contains about 2
tablespoons.
Creamy Taco Soup
This is my version of Low Carb Taco
Soup. I wanted to halve the amount of meat, plus add black beans and
corn. The new ratio of ingredients worked out perfectly and made a
super halftime meal during the Super Bowl.
—1 lb ground pork
—1 lb lean ground beef
—2 taco seasoning packets
—1 1/2 cups chicken broth
—2 cans Ro-Tel diced tomatoes and green
chilies, undrained
—1 can whole kernel corn, drained
—1 can black beans, rinsed and drained
—2 (8 oz) pkgs cream cheese
In a large nonstick pot brown ground
pork and ground beef. Drain off fat and return meat to pot. Add all
of the remaining ingredients except for the cream cheese and stir
well to combine. Add cream cheese on top. Cook over medium heat for
10 minutes. Stir softened cream cheese into soup until well
incorporated. Serve immediately with crushed tortilla chips on top.
Note: If you are
watching your sodium intake, you could use only one and a half taco
seasoning packets or look for a low-sodium version.
