As a busy working mother of two active boys, the simpler in the kitchen, the better.

I prefer recipes that don’t have a ton of ingredients. Recipes with a long list of ingredients seem daunting to me as it requires more planning and more shopping. There aren’t many recipes that contain only three ingredients, but I’ve discovered two that are definite keepers in my recipe book.

Herb and Garlic Pork Roast

One hectic Monday morning I was able to throw a pork roast into the crockpot on my way out the door to work. When I arrived home, I was greeted by a comforting aroma wafting through the house. I removed the pork roast from the crockpot and removed the string and cut it into thick slices. It was one of the tastiest and juiciest pork roasts I’ve ever had and the easiest one too.

—1 (3 lb) pork shoulder (do not remove string)

—1/2 cup white wine (I used Pinot Grigio)

—1 envelope Savory Herb with Garlic Soup Mix

Place pork shoulder in crockpot. Pour wine into bottom of crockpot. Sprinkle soup mix onto meat. Cover with lid and cook on low for 8 hours. Remove pork from crockpot and place on cutting board. Carefully remove string. Cut into slices and serve.

Roasted Herb and Garlic Red Potatoes

After enjoying the flavor of the Savory Herb and Garlic soup mix on the pork roast, I decided to try it on something else after my friend Pam told me it was also great on roasted potatoes.

I decided to use red potatoes and the result was just as good as I’d hoped. The potatoes were crispy on the outside and tender on the inside. The red potatoes drenched in garlic and herbs made a savory and simple side dish.

—2-3 lbs red potatoes, cut into chunks (cut into quarters or eighths)

—1/3 cup extra virgin olive oil

—1 envelope Savory Herb with Garlic Soup Mix

Preheat oven to 425 degrees. Place potato chunks in a 13x9-inch baking dish. In a small bowl, whisk together soup mix and olive oil. Pour mixture over potatoes. Toss potatoes to coat. Place in oven and roast for 35 minutes until potatoes are tender and golden brown.
