Don’t let the sparklers and fireworks steal the show on the Fourth of July. Dazzle your family and friends with red, white and blue recipes.

 

Red, White and Blue Cheesecake Salad

A fruity salad full of berries and cream is sure to please. It’s the ideal dessert to eat while watching fireworks from your backyard.

 

16 oz strawberries, washed

20 oz other berries (blueberries, raspberries, blackberries), washed

8 oz cream cheese, room temperature

½  teaspoon vanilla

1 teaspoon fresh lemon juice

¼  cup sugar

½  cup heavy cream

½  teaspoon lemon peel, grated

½ teaspoon orange peel, grated

whipped cream, optional

 

Wash berries and set aside. In a medium mixing bowl, add cream cheese, vanilla, lemon juice, sugar and heavy cream. Use an electric beater to whip well. Add in grated peels and mix well.

Right before serving, slice strawberries and then gently fold in all berries. Pour mixture into a large serving bowl, or individual bowls.

Top with whipped cream if desired.

 

Note: This does not transport well after being mixed as it may become watery. If traveling with this dish, keep the cream cheese mixture very cold and separate from the berries and combine them right before serving.

 

Red, White and Blue Kabobs

When my son was in preschool he needed to bring a healthful snack to share with his class, and these kabobs were so easy to make and kid-approved.

 

whole fresh strawberries, hulled

large marshmallows or thick slices of banana

whole fresh blueberries

wooden skewers

 

Thread kabobs in this order — red, white and blue and continue two or three times.

 

Note: If using marshmallows, these will keep in an airtight container for a few hours. If using bananas, serve right away.

 

Red, White and Blue Yogurt Parfaits

If you are camping on the Fourth of July, pack four ingredients for a sweet and simple breakfast.

 

sliced strawberries or whole raspberries

vanilla yogurt

blueberries

granola

 

In a clear glass or cup layer with granola on the bottom, then blueberries, then yogurt, and strawberries or raspberries on top. Finish with a dollop of yogurt on top and a blueberry, strawberry or raspberry on the very top.
